Let’s get pinteresting up in here! …. Katie made me write that. Meatloaf cupcakes sounded like the perfect “cute” dinner to make or should I say it sounded like the only one I considered to try. Rainbow cake with shooting stars sounded like too much effort. For the mashed potato topping (frosting), I bought one white sweet potato and one large potato to balance out the salty taste of the meatloaf. I highly recommend it.

Meatloaf Cupcakes 

Meatloaf ingredients

1lb of beef

1/2 large onion (grated)

1tsp ground thyme

1tsp ground coriander

1tsp garlic powder

1tsp of salt and pepper

1/4 cup of ketchup

1/2 cup of Udi’s Gluten Free bread crumbs

Mashed Potato Ingredients 

1 large potato

1 white sweet potato

1 T butter

1/2 cup of milk

Meatloaf Directions

  1. Preheat oven to 350 degrees
  2. Place ground beef in a medium bowl, add all the seasonings and mix well.
  3. Spray muffin tin with Pam.
  4. Fill muffin tin with meatloaf and spread extra ketchup on top.
  5. Bake for 25-30 min.

Mashed Potato Directions 

  1. Peel and cut potatoes into cubes.
  2. Boil until soft. Drain water.
  3. Mash potatoes with butter and milk.
  4. Add salt to taste
