This dish was heavenly. Seriously, I could serve this to a table in a restaurant and they would never know I made it in my apartment. With just a few simple ingredients and easy steps to follow I made a drool worthy dish. In fact, I caught Katie multiple times in the kitchen drinking the lemon butter sauce!

Lemon Butter Chicken 

  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • Juice of 1 lemon
  • 1 teaspoon dried thyme
  • 2 cups baby spinach, chopped
