Fish is something I generally do not cook. I cannot say why I chose to cook chicken, pork or beef over fish, but I’m determined to try more fish related recipes. Parmesan Crusted Tilapia seemed like a nice recipe to give a try and was quite easy! I had all of the ingredients besides the tilapia and the recipe was originally completely gluten free which was a great plus for Katie. Now, the recipe calls for oil to be drizzled over the tilapia. I may or may not have read the directions and proceeded to put oil on the bottom pan and lay the fish on top. Do not follow in my steps! The fish was delicious, but I felt it could have been better and crispier without the excess oil.
