Butternut squash soup is one of the perfect fall dishes Katie and I enjoy making. As long as you own a hand held blender you can generally make everything soup. We have tried many different soup recipes and this Roasted Butternut Squash Soup is ranking in first place. I tend to gravitate to soup recipes that roast the vegetables in the oven before simmering in a pot on the stove. I feel it gives an all-around better taste and texture to the final dish. Also how can you say no to soup topped with bacon and cheese?!
I definitely thought the soup needed more bacon.
