Gluten free baking can be difficult if not using the correct ratio of flours. This is why we love using the Bob’s Red Mill brand! Why make life hard when you can go buy an all purpose flour at the grocery store? The German pancakes turned out fluffy and buttery we were happily surprised. Be sure to fill the muffin tins a little less than half way because the batter grows outside of the tin. Almost immediately the pancakes will deflate outside of the oven. Once cooled, we spread out favorite Farmer’s Market Boysenberry Marmalade and Lemon Curd from Glashoff Farms in Suisun Valley, CA.
