It’s February and you know what that means Valentine’s Day. Now I’m here to help all the dudes out there make a Sunday Valentine’s Day Brunch for their lady or dude. You’re going to impress your significant other with this Winter Fruit Spring Roll and Lemon Poppy Seed Greek Yogurt Dip.
You’re also going to realize how much you hate working with rice paper. If you get it too wet it has the texture of snot and if you take too long it drys and sticks to your cutting board! I made it work but I recommend watching the youtube link I found that really helped me a lot!
Ah! I told you the rice paper was difficult to work with!
Seasonal Fruit of your choice! I used Mint, Kiwi, Strawberries, Tangerines and Pears.
7oz Plain Greek Yogurt
1-2 T of Lemon zest
1-2 T Poppy Seeds
In a small bowl mix together yogurt, lemon zest, and poppy seeds. Mix ingredients to taste and set aside in the refrigerator.
Cut fruit ingredients into thin slices and set aside.
Place cooked rice paper on a smooth clean surface. I first tried this on a bamboo cutting board and found the rice paper difficult to work with. Highly recommend watching a youtube tutorial before attempting your first spring roll.
Place each fruit ingredient in the middle of the rice paper and fold into the roll. See pictures above for an example.
Serve with the Lemon Poppy Seed Greek Yogurt Dip and your significant other will love you for life!
