Who doesn’t love deviled eggs!? Okay, maybe those who do not like eggs, mayo, and vinegar but I like to think that means more eggs for me! Every Easter holiday we make deviled eggs so I thought I would practice and think of creative varieties. Katie is known for her deviled eggs in her family and they are fondly called Katie Eggs. Along with Katie Eggs, I made a Jalapeno Bacon and Lox Deviled Egg. Hope you enjoy! I accidently¬†went a little crazy with the mayo so I recommend adding the mayo to taste if you’re not a big fan of that delicious condiment.

Jalapeno Bacon Deviled Egg

Ingredients

4 hard boiled eggs

1/4 cup of Mayonnaise or less

1 tsp Dijon mustard

5 pickled jalapeno slices, chopped

1-2 tsp pickled jalapeno juice

2-3 strips of bacon finely chopped

Directions

With a hand mixer, mix hard-boiled egg yolks with mayonnaise, dijon, and jalapeno juice until smooth in texture. Fold in bacon and jalapeno’s. Pipe mixture into hard-boiled egg white’s and let cool in the refrigerator for about an hour. Enjoy with a pickled jalapeno on top!

Egg and Lox Deviled Egg

Ingredients

4 hard boiled eggs

1/4 cup of Mayonaise or less

1 T Dijon mustard

1 1/2 tsp of dill weed or fresh dill

1/2 tsp apple cider vinegar

Smoked salmon capers for topping

Directions

With a hand mixer, mix hard-boiled egg yolks with mayonnaise, dijon, and apple cider vinegar until smooth in texture. Fold in dill weed and pipe mixture into hard-boiled egg whites. Top with a small fold of smoked salmon and capers. Let cool in the refrigerator for about an hour. Enjoy!

Katie Eggs

Ingredients

 

4 hard boiled eggs

1/4 cup of Mayonaise or less

1 generous tablespoon of Dijon mustard

1 tsp of apple cider vinegar

2-3 tsp chili powder

Paprika to garnish

Directions

With a hand mixer, mix hard-boiled egg yolks with mayonnaise, dijon, apple cider vinegar and chili powder until smooth in texture. Pipe mixture into hard-boiled egg white’s and let cool in the refrigerator for about an hour. Enjoy with a sprinkle of paprika!
