Today is Katie’s 25th Birthday! Last night I took her out to her favorite Sushi restaurant, Kru, and today all she asked for was deep friend cheese. It’s times like this I appreciate how much I love her.

We found this recipe through a Facebook post from Buzzfeed Tasty. Whoever made food videos possible on Facebook is a genius! Typically when Katie likes something she sees online she will send it to me with “YAASSSS” in  the body of the message.

We thoroughly enjoyed the Spinach Dip Mozzarella Sticks even though it had a little more assembly line work than we wanted for our Sunday afternoon. We did add an extra 1/4 a cup of chopped canned water chestnut’s to add a little more texture to the sticks. I also recommend not making the cheese mixture too flat as it is difficult to bread and fry.

Gluten Free Substitutions – Katie used Ian’s Gluten Free Panko Breadcrumbs and Bob’s Red Mill Gluten Free Flour. If you want to make gluten-free and non-gluten-free mozzarella sticks please do not use the same oil to fry! This is a big cross contamination no no! If you like to eat gluten-free but do not need to stick to the diet for medical reasons feel free to share the oil. In our opinion, you should only stick to a strict gluten-free diet if you need to medically.
