Happy Valentine’s Day! Katie and I thought for our first Valentine’s Day living together we would make homemade Gluten Free Crab Ravioli with Saffron Sauce. We love to cook so we thought this would be easy compared to making homemade sushi like we originally planned. Making ravioli’s from scratch is difficult enough but gluten free ravioli’s was quite the challenge! The pasta was good but it was dense compared to wheat ravioli’s. Crab Ravioli with Saffron Sauce 

Ingredients
  • 1 batch homemade GF pasta dough
  • 1 pound lump crab meat (Do not buy imitation crab! It is not GF)
  • 1 cup (8 oz) ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • 3 green onions, chopped
  • salt and pepper
  • chives, chopped, for garnish
For the sauce:
  • 4 tablespoons butter
  • 1/2 cup GF chicken stock
  • 1 cup heavy cream
  • pinch of saffron (5 or 6 threads)
  • 1 Tbsp GF flour
  • 1/4 cup Parmesan cheese, shredded
  • 2 tsp tomato paste

  • 3 Cups GF AP Flour Blend
  • 1 teaspoon sea salt
  • 4 teaspoons xanthan gum
  • 5-6 extra large eggs, lightly beaten
