I am finally done with my three-week business trip and couldn’t be happier! Love my job but there is something about being gone from home that long that I did not enjoy. Maybe it was missing my loved ones and friends or missing the ability to cook with Katie. I decided to try out a Garlic Butter Shrimp Pasta recipe because it sounded like a quick easy meal and great leftovers. The quick and easy part of this meal were not true at all, however, the delicious meal and leftovers were true. The pasta sauce took long than I had hoped but it was worth the wait in the end. I ended up taking a potato masher to the tomatoes to help make it look and taste saucier.
