Katie here! Devin was out of town this weekend on a business trip so I thought I would make a Tamale Pie. The recipe was super simple and easy for one person to make alone. The cornbread crust was my favorite part and it tastes as good as it looks!

This pie left us about 4 leftover lunches.

Gluten Free Substitutions: Use Bob’s Red Mill Gluten Free All Purpose Flour easily found at your local grocery market. I used canned corn in water but if you use creamed corn check the ingredients before using! Canned food often adds wheat as a preservative. Also be sure to check the ingredients of the corn meal you buy. Most are gluten free but some add flour. Enjoy!
